Emphasis is on easy and quick candies including old-fashioned hard candy and lollipops, fondant cream centers, molded chocolates, peanut butter cups, coconut bon-bons, and more.
CANDY 2(a single 3-hour class)
More difficult and elegant creations include chocolate-covered cherries, turtles, nut clusters, jelly candies, marshmallow confections, hand-rolled and hand-dipped chocolate creams, and others. We will also demonstrate the easy way to temper chocolate - the new Sinsation tempering machine.
TRUFFLES AND MORE(a single 3-hour class)
For those interested in focusing on truffles, we present French whipped-cream truffles, Texas truffles, white truffles and chocolate-covered cherries, as well as other creative confections.
ROLLED FONDANT(a single 5-hour class)
This class is designed for the student who wants to explore the "new" art of rolled fondant decoration. New to many Americans, this is really an old art just now enjoying a popular resurgence. Crimping, brush embroidery and extension and other fondant techniques are explored.
SWEETHEARTS CHOCOLATES(a single 3-hour class)
Make your own heart-shaped molded chocolate box, then fill it with an assortment of delectable delights (perfect for your sweetheart) including soft caramel and chocolate hearts, chocolate truffles, crunch hearts and cream filled-chocolates.
CHOCOLATE AND CHERRIES(a single 3-hour class)
Come learn two different ways to make chocolate-covered cherries - molded and hand-dipped. Also included: liquid-center cherry chocolates and cherry tarts.
MARSHMALLOW(a single 3-hour class)
Home-made marshmallows are the theme for this class. Molded in chocolate, cut shapes, marshmallow eggs, rocky road and fudge round out the day.
PANORAMIC SUGAR EGGS(a single 3-hour class)
The fun tradition of decorating Easter eggs jumps ahead with these molded-sugar eggs you remember from your childhood. Learn how to make and decorate these eggs.
BEGINNING CAKE DECORATING(7 classes, 3 hours per class)
Students provide their own equipment and supplies, which may be purchased from us. In the beginning class, students explore the basics of cake decorating, including the technique of folding parchment paper bags, several types of icing, figure piping, several types of flowers, finesse and smoothing techniques, and other necessary skills.
Students will construct and decorate two novelty cakes, double-layer round cake, and a two-tier wedding cake.
INTERMEDIATE CAKE DECORATING(7 classes, 3 hours per class)
Our seven-week classes provide 21 hours of instruction at either the basic or intermediate level of cake decorating.
Students learn additional flower types and techniques, many different icings including royal, buttercream and cream cheese, and perfect additional writing techniques.
GUM PASTE FLOWERS(5 classes, 6 hours per class)
Students will perfect orchids, roses, and many other flower blossoms. Students then arrange their creations into beautiful bouquets.
